The Value of Heirloom Corn: Biodiversity, Culture, and Cuisine, with Fatima Juarez

  • to

As part of his Breath(e) project, Grounded, Ron Finley hosts a series of workshops in his temporary garden at the Hammer Museum, led by local artists. Each workshop can accommodate up to 20 participants, with all materials provided by the instructors. Availability is limited and on a first-come, first-served basis, with a sign-up sheet available in the museum lobby starting one hour before the program.

In this workshop led by Chef Fatima Juarez, we will explore the fundamental differences between criollo corn and genetically modified corn, focusing on the importance of conserving Mexican criollo corn and its biodiversity. Throughout the workshop, we will discuss the environmental, cultural, and social impacts of both corn varieties, and discuss how preserving criollo seeds helps maintain traditions and support the farming communities that grow them. In addition, we will learn how to make tlacoyos with criollo corn dough, a traditional treat that highlights the richness and authenticity of this ancestral ingredient.
